This is definitely a "go-to" recipe by Giada. Those Mini Mascarpone Cupcakes are oh-so-yummy! I've made them so many times that I don't even have to look at the list of ingredients. I didn't have strawberries to make the glaze so instead we used chocolate (even better!). Fiona can definitely vouch for them being tasty. She ate about five of them. And kept asking, "More mommy!" Ruby, being allergic to eggs, however, took part in licking the ganauche frosting. These are addicting! Don't let the mini cupcakes fool you. Mini really means...more please!
